Não adianta enfeitar o pavão!

Não é preciso ser um estudioso da História para saber que o Natal não tem origem cristã. Basta consultar uma boa enciclopédia ou a internet. A data tem raízes em antigas comemorações pagãs, como as saturnais romanas – uma festividade dedicada a Saturno, deus da agricultura. Da mesma forma, adoradores do deus Mitra atribuíam a 25 de dezembro o culto ao sol nascente.

Durante suas comemorações, os pagãos trocavam presentes e festejavam com muita comida e bebida – costumes que o Natal preserva até hoje. Talvez por isso a festa esteja mais ligada aos excessos do que à reflexão e ao recolhimento. 

Não é por menos que na atual mesa romana e mundana repouse soberana aquela imensa ave, toda adornada numa magnífica bandeja e que faz eclodir, com sua presença, um altissonante: “Oh!”. Nada mais luxuriante, nada mais saturnal, do que um peru paramentado para a festa.

Escrever sobre o peru faz-me lembrar da infância, quando num dia corri junto com minha mãe para atender a porta de casa, e ela, perplexa, recebeu em suas mãos um imenso peru vivo – naquela época eles não vinham temperados nem tinham apitos…

O peru conviveu conosco cerca de um mês, quando minha mãe – uma excelente cozinheira espanhola e experiente no abate de galinhas e outros bichos –, meio desesperada por não saber dar cabo daquele monstrengo -, pediu socorro a dona Benê, nossa então ajudante doméstica. Ela rapidamente trouxe a solução: “Não se preocupe! Antes de matar o peru é só dar cachaça para ele. Vai ficar mansinho e a carne não vai ficar dura. Eu ajudo!”.

O resultado foi que, de gole em gole, encontramos, horas depois, o peru tonto no meio do quintal e, ao seu lado, estatelada no chão, dona Benê. O resultado foi muito suor e pouco sabor!

Talvez o amigo leitor também tenha chegado à mesma conclusão: o peru hoje vem morto, tem apito, mas a canseira é a mesma só de pensar em como prepará-lo. É um tal de “põe isso, põe aquilo, encha disso, recheia daquilo, corta assim e assado, fica lindo!”. Mas o sabor nunca é o que se espera…

Eu cresci, envelheci e aprendi que, para tirar do peru seu melhor sabor, não são necessários grandes artifícios. 

A RECEITA DO PERU É A SEGUINTE:

Pegue o peru com apito e tudo, retire a sacolinha com os miúdos, lave-o muito bem para tirar o tempero que o acompanha. Deixe-o de molho em água e sal grosso num balde fundo por um dia.

No dia seguinte, besunte o peru por dentro e por fora com 400 gramas de manteiga sem sal. Proteja as pontas das asas e das coxas com papel alumínio. Depois envolva-o totalmente com papel alumínio e leve para assar até que o apito saia ou, ao furá-lo com uma faca, não saia mais um líquido cor de rosa.

Retire o papel alumínio externo e doure-o em forno alto por mais 15 minutos.

Sirva-o com um bom purê de batatas, que não mascara seu sabor delicado.

Esqueça os molhos! No máximo, gotas de limão. E bom apetite!
