Presenciando outro dia uma conversa entre um vegetariano e um adepto do consumo de carne (conversa essa que acabou degenerando, até chegar a insultos mútuos), fiquei convencido de que vivemos em tempos muito perigosos. Não o perigo de um ataque nuclear ou de uma bala perdida, afinal para quem morre dá no mesmo. Estou falando de dois perigos que representam muito bem as contradições de nossa época: a permissividade e relativização de tudo, ou o igualmente perigoso policiamento da vida alheia. Essas atitudes têm contaminado até mesmo a santa paz da culinária. Vira e mexe ouvimos dizer que comer isso faz mal, ou que comer aquilo é a panaceia que cura tudo. Quem, por exemplo, não se lembra do famigerado coquetel de berinjela com laranja… Quanta bobagem!

Muitos radicais vegetarianos pregam a compaixão pelos animais, em contrapartida tratam o seu próximo com extrema crueldade. Igualmente, carnívoros convictos, muitas vezes sem pensar eticamente ou sem nenhum critério ecológico, só se sentem satisfeitos quando seu prato está cheio da carne e do sangue de suas vítimas. Não sou a favor de nem um nem outro. Sou a favor de que nossa mesa nos leve ao prazer, mas com a consciência de que somos responsáveis pelo que comemos, sejam vegetais ou animais. Sou a favor do que Jesus disse ao responder, sem entrar no mérito da questão, àqueles que criticavam seus discípulos por comerem sem lavar as mãos. Parafraseando-o: o que avilta o homem não é o que entra pela sua boca, mas sim o que sai dela. Portanto, façamos da mesa um motivo de alegria, é claro que com o devido respeito por aquilo que sacia a nossa fome legítima ou não. Para todos os que compartilham ou não do meu pensamento, deixo nesta seção uma receita que não
ferirá nem gregos nem troianos, muito menos a carnívoros ou vegetarianos. ………………….

INGREDIENTES:

1 pacote de sêmola de trigo para couscous 

o mesmo volume de água fervente 

5 colheres de sopa de mel 1 colher de sopa de água de flor de laranjeira 

1 pitada de sal suco de três limões sicilianos 50 g de damascos picados 50 g de uvas passas brancas 

50 g de sementes de girassol torradas 50 g de amêndoas sem pele fatiadas 50 g de castanhas de caju 1 maço de hortelã picado

PREPARO:

Ferva a água e escalde a sêmola de trigo. Deixe descansar por 10 minutos até que ela absorva todo o líquido. Junte todos os outros ingredientes 

e mexa com as mãos dando uma textura de farofa solta. Acompanha muito bem carnes ou vegetais
