Lei de Kashrut

A culinária judaica é muito mais que comida no prato, é uma continuação da história religiosa, cultural e familiar de milênios. A Lei de Kashrut, lei alimentar, define o que pode ou não ser comido. A palavra Kasher significa “pode ser comido” e a lei manda não misturar leite e carne. De acordo com Moisés: “Não comer o bezerro no leite da mãe”.

Kasher significa correto, justo, bom. Aplicado à comida, refere-se ao consumo e o preparo de todos os pratos da dieta judaica. É importante ressaltar que a kashrut não é um estilo de culinária. Comida chinesa, francesa, italiana, indiana, árabe ou qualquer outra podem ser kasher desde que preparadas de acordo com as leis judaicas. A comida tradicional judaica pode ou não ser kasher, dependendo de como foi preparada.

A Kashrut se desenvolve baseada em duas regras básicas. A primeira delas especifica o tipo de carne que pode ou não ser consumida. A proibição é muito clara no capítulo 11 do Levítico: “Entre todos os animais da terra, os que podereis comer: aqueles que têm os cascos fendidos e que ruminam.” Ou seja, incluem-se aí vaca, carneiro, bode e cervo. As aves permitidas são o frango, o peru, o ganso, o faisão e o pato. Já o Deuterônimo, no capítulo 14, explica que nenhum crustáceo é kasher: “Comereis de tudo que há nas águas: tudo que tem barbatanas e escamas comereis; e tudo o que não tem barbatanas e escamas não comereis; é impuro para vós.”
A outra grande regra consiste em não misturar carne com leite e derivados, seja na preparação, armazenamento ou consumo. A origem bíblica desta norma é encontrada no livro Êxodos, capítulo 19 que diz: “Não cozerás o cabrito no leite de sua mãe.” Foi a partir desta regra que se classificou a comida kasher em 3 categorias: carne, leite e parve – alimentos que crescem na terra.

A carne kasher é singular em todos os aspectos, desde o tipo de animais que são permitidos até a maneira como são abatidos e preparados para o consumo. Existe um ritual para o abate dos animais; baseado no fato de que o sangue não deve ser consumido porque simboliza a própria essência e característica do ser humano – os rabinos concluíram que um animal que é morto para virar alimento deve ter seu sangue totalmente drenado em dois métodos. Primeiro, “deixar de molho e salgar” (chamado de kasherizar); segundo, assar sobre ou sob uma chama ou num forno elétrico ou assadeira elétrica. Assim, todo o sangue é extraído.
Todos os alimentos que contém leite, ou que são dele derivados, são considerados Chalavi ou milchig. Isto inclui também a manteiga, iogurte, quefir, coalhada e todos os queijos, duros, macios ou cremosos. Utensílios são usados exclusivamente para os laticínios.
As frutas, vegetais, cereais e todos os outros alimentos que constituem uma dieta e que crescem na terra são parve e podem ser utilizados sem restrição. Os peixes e os ovos também estão inclusos na categoria. 

A história judaica prova que a comida age como agregador para famílias e para um povo que espalhou-se por todo mundo e que continua unido e fiel a suas tradições.

Surinamenho

200 g de coco ralado, 200 g de nozes picadas, 200 g de passas sem caroço, 200 g de ameixas secas sem caroço, 200 g de apricots secos, ¼ xícara de chá de açúcar, 2 colheres de chá de canela em pó, ½ xícara de vinho tinto doce

Coloque todos os ingredientes menos o vinho numa panela e cubra com água. Cozinhe em fogo baixo, mexendo de vez em quando com uma colher de pau, quando a a água estiver secando, coloque o vinho.

Linguado Recheado de Sucot

6 pequenos filés de linguado, 2 colheres de sopa de suco de limão,1 colheres de sopa de manteiga, 2 colheres de sopa de azeite, 2 cebolas bem picadas, 1 dente de alho picado, 2 colheres de chá de dill bem picado, ½ colher de chá de gengibre ralado, 1 pitada de pimenta dedo de moça bem picado, sal a gosto

Polvilhe os filés de peixe com sal e passe sobre as fatias o suco de limão. Em uma frigideira grande, fogo médio, derreta a manteiga, junte o azeite. Refogue e cebola e o alho sem deixar que fiquem tostados. Junte o dill, o gengibre e a pimenta dedo de moça. Mexa e deixe no fogo por mais um ou dois minutos. Retire do fogo. Reserve duas colheres de sopa da mistura da cebola. Divida o restante e passe por cima de cada filé de peixe. Enrole os filés começando pela parte estreita tendo cuidado para que o recheio fique dentro. Coloque os rolinhos em uma assadeira e por cima espalhe a mistura de cebola reservada. Asse os rolinhos, sem cobrir em um forno pré-aquecido a 200 graus por 15 minutos. Antes de servir pincele os peixes com o que sobrou na assadeira ou mesmo um pouco de azeite.

Tsimes de Cenoura e Batata Doce

1 colher (chá) de óleo, 6 cenouras fatiadas, 1 batata doce grande picada em cubos, 3 colheres (chá) de mel, 1/4 xícara de suco de laranja,1 pitada de sal
2 fatias de abacaxi cortadas em pedaços, 1/2 colher (chá) de noz moscada

Refogue as cenouras no óleo por 15 minutos. Acrescente a batata doce, o mel, o suco e o sal. Continue refogando em fogo baixo por 30 minutos. Acrescente o abacaxi e a noz moscada. Depois de 5 minutos retire do fogo. Sirva quente.
