É impressionante o quanto a gastronomia está na moda e como vemos a proliferação de excêntricos chefs de cozinha afoitos em criar pratos que mais atendem aos seus devaneios narcisistas do que ao paladar e ao estômago de seus clientes.

Aliás, a palavra gastronomia deriva do grego e significa regras ou leis do estômago. Hoje, porém a freqüente utilização da palavra serve para conferir status a pratos nem sempre muito palatáveis.

Quanta bobagem! Bobagem semelhante seria escrever sobre receitas da Primavera, cair na mesmice ao citar “a renovação”, “os passarinhos cantando”, “um clima de romance no ar”…

Para mim a Primavera evoca a uma antiga moradora da rua Capitão Cavalcante, aqui no pedaço. Os mais antigos talvez se lembrem dela…

Estou falando da Dona Anita Ferreira, ela sim é um ícone desta estação. Dona Anita foi uma naturalista de vanguarda. Quando os modernos chefs de cozinha nem sonhavam usar flores nas suas receitas, ela já publicara um livro sobre o uso culinário das flores. Por isso, neste artigo tomo a liberdade de publicar duas de suas deliciosas receitas. Como fui seu amigo, tenho certeza que ela não se importaria que o fizesse.

GELÉIA DE HIBISCO

INGREDIENTES:

– 300 g de pétalas de hibisco vermelho frescas ou desidratadas;

– 300 g de açúcar

– 3 gotas de água de flor de laranjeira;

– 150 g de pectina (comprada em casa de produtos naturais);

– 1 pimenta “dedo de moça” sem sementes, micropicada;

– 1 copo de água.

PREPARO:

– Faça uma calda rala com a água e o açúcar;

– Acrescente os outros ingredientes;

– Cozinhe até o ponto de geléia mole.

GELÉIA DE ROSAS

INGREDIENTES:

– 200 g de pétalas

– 200 g de açúcar cristal

– 100 g de pectina

– 1 colher de chá de ácido cítrico

PREPARO:

Cozinhe até que a geléia grude na colher.

Você pode usar esta mesma receita substituindo a rosa pela flor do ipê amarelo.

Estas receitas são ideais para servir com pão preto e manteiga. DELICIE-SE!

Obs:Dependendo da cor da rosa, o sabor é diferente. Mas atenção, use somente rosas orgânicas ou de jardins. Não é aconselhável comprá-las na floricultura.
