Tempere a carne com sal, pimenta-do-reino, alecrim e tomilho. Em uma panela, esquente o óleo e refogue a cenoura, o salsão, o alho-poró, a cebola e o tomate.
Acrescente a carne temperada. Refogue até ficar dourada e cubra com água. Cozinhe em panela comum ou de pressão até a carne soltar dos ossos (no caso da rabada).
Separe a carne do caldo de cozimento. Coe o caldo e reserve na geladeira. Depois, retire e descarte a gordura acumulada por cima.
Pouco antes de servir, reúna a carne com o caldo desengordurado e reaqueça.
Deixe reduzir o caldo pela metade. Acrescente o chocolate, emulsione com a manteiga. E junte as castanhas. Sirva com purê de batatas.
