Sobras de Chocolate
A Páscoa já passou. Acordamos no meio dos papéis laminados e das fitas, um pouco enjoados. Um barulho longínquo de restos de ovos de chocolate sendo assaltados da geladeira persiste em arranhar nossos ouvidos.
Sempre resta algo. Pode ser apenas o peso na consciência de quem exagerou no consumo de chocolates. Mas, se os restos incluírem também sobras de ovos ou tabletes inteiros ou em pedaços, o que fazer com eles se resistirmos ao impulso imediato de comê-los?
Aqui vão algumas recomendações na hora de guardá-los: a primeira é não colocar chocolates na geladeira, pois ele absorve o cheiro de outros produtos que estão no local. Para não correr o risco de comer chocolate com gosto de cebola, é recomendável embrulhá-lo em papel-alumínio e guardá-lo no armário, dentro de um recipiente com tampa.
Bem fechado, longe da luz e do calor, o chocolate pode ser mantido dentro de um armário por um bom tempo. O importante é ter a data de validade na embalagem. Em geral, chocolates artesanais duram menos tempo que os industrializados. Os ovos recheados também têm tempo de validade menor do que os sem recheio.
Mas se você estiver disposto a dar cabo definitivo deles, saiba que o chocolate não precisa ficar só na sobremesa; na receita a seguir ele é o astro do prato principal “salgado”.
INGREDIENTES
– 2,5 kg de rabo de boi (ou a carne de sua preferência)
– Sal e pimenta-do-reino a gosto
– 5 ramos de alecrim
– 5 ramos de tomilho
– Óleo para refogar
– 100 g de cenoura picada
– 50 g de salsão picado
– 150 g de alho poro picado
– 200 g de chocolate meio-amargo ou ao leite
– 50 g de manteiga gelada
– 100 g de castanhas de caju torradas
PREPARO
Tempere a carne com sal, pimenta-do-reino, alecrim e tomilho. Em uma panela, esquente o óleo e refogue a cenoura, o salsão, o alho-poró, a cebola e o tomate.
Acrescente a carne temperada. Refogue até ficar dourada e cubra com água. Cozinhe em panela comum ou de pressão até a carne soltar dos ossos (no caso da rabada).
Separe a carne do caldo de cozimento. Coe o caldo e reserve na geladeira. Depois, retire e descarte a gordura acumulada por cima.
Pouco antes de servir, reúna a carne com o caldo desengordurado e reaqueça.
Deixe reduzir o caldo pela metade. Acrescente o chocolate, emulsione com a manteiga. E junte as castanhas. Sirva com purê de batatas.
