Páscoa (Pessach), passagem em hebraico. A libertação do povo hebreu da escravidão do Egito. O êxodo não é apenas um evento histórico, mas uma possibilidade sempre atual.

O Egito dos tempos bíblicos representava as forças que escravizam o homem, e toda vez que ele consegue se libertar destas forças vivencia um novo êxodo. O povo hebreu, antes de sua partida rumo à terra prometida, comeu um cordeiro, ervas amargas, pão não fermentado.

Cristo, como genuíno judeu, celebrou, antes de sua morte, a última páscoa e instituiu para os cristãos uma nova celebração, “A comemoração de sua morte”.

Cristo, o prefigurado cordeiro pascal, deu sua vida em sacrifício, amargou dores por todos nós, doou seu corpo imaculado, qual pão não fermentado.

Tudo, para que aprendêssemos uma verdade impar – “Nem só de pão vive o homem, mas de cada declaração vinda de Deus” (Mateus 4:4).

Nesta época do ano quando, judeus e cristãos celebram sua libertação, cada um de nós deve se perguntar: Qual é o meu Egito particular? O que é que constringe e obstrui minha própria vida?

Não há duvida que não foi fácil retirar o povo judeu do Egito, contudo, difícil mesmo é retirar este Egito de dentro de cada um de nós.

Mais uma vez, digo – Pessach não é um acontecimento que ocorreu no passado, mas sim uma força ainda sedutora em nossos dias.

Proponho para esse dia uma receita simples, atávica. Tão primitiva quanto o homem. O delicioso pão. Pão ázimo – sem fermento.

PÃO ÁZIMO (sem fermento)

INGREDIENTES:

250 g de farinha de trigo integral;

1 colher de chá de sal;

Cerca de 200 ml de água;

PREPARO:

Misture a farinha e o sal e coloque na superfície de trabalho;

Borrife um pouco de água no meio e trabalhe a mistura, aos poucos, até a farinha ser totalmente absorvida pela água; 

Pare assim que a massa ficar macia e elástica.

A quantidade exata de água necessária vai variar, dependendo da farinha e do tempo. Sove bem a massa – quanto mais, melhor. Em 10 minutos, ela ficará bem leve.

Cubra com um pano úmido e deixe descansar por 30 minutos.

Sove levemente outra vez, antes de dar forma aos pães.

Divida a massa em pequenas bolas e achate-as com a palma da mão. Polvilhe os dois lados das rodelas com um pouco de farinha e abra-as com o rolo, deixando-as finas como pergaminho.

Cozinhe cada rodela numa chapa ou grill quente por 2 minutos, vire-as uma vez. 

Espere 3 minutos, quando o pão estufar está pronto.

Ponha-o num prato forrado com guardanapo, empilhe os pães cubra com outro guardanapo e leve à mesa.
