A cozinha mexicana mistura sabores fortes com inúmeras combinações de ingredientes em receitas simples, saborosas e coloridas. Os mexicanos guardam verdadeira paixão por suas Tortilhas – tão antigas quanto o próprio país. Estas, ainda hoje são confeccionadas de forma quase artesanal. Os grãos da maçaroca de milho são amaciados em água com um pouco de sal, depois cozidos, triturados e amassados formando uma massa consistente. Após este processo, são modeladas e colocadas sobre uma chapa quente até ficarem douradas e flexíveis.
Depois de prontas, podem ser servidas das mais variadas maneiras: vão à mesa frias, quentes, fritas, tostadas com, ou sem recheio, seja este de carne ou de feijões (frijoles). A Tortilha divide-se, assim, em Tostadas, Sopés, Chalupas, Gorditas, Pellizcadas, Peneques, Quesadilas e Chilaquiles .
Com as Tortilhas confeccionam-se inúmeros pratos, como os tacos de leitão pibil de Yucatán, as enchiladas de mole cobertas com natas, cebola e queijo ralado, tacos de carninhas. A Tortilha, além de ser um nutritivo complemento alimentar, serve também como colher. O Mexicano diz que é mais saboroso ingerir desta forma os alimentos.

Autêntico Flan Mexicano
3 ovos
1 lata de leite condensado
1 xícara de leite
1/2 xícara de açúcar
1 colher de chá de extrato de baunilha
Numa forma de pudim, coloque o açúcar e derreta em fogo brando, mexendo sempre, ate derreter completamente. Espalhe a calda uniformemente no fundo e nos lados da fôrma. Retire do fogo e deixe esfriar. Aqueça o forno a 350 graus. Coloque no liquidificador as 3 gemas, leite condensado, leite e a baunilha. Bata ate misturar bem. Coloque essa mistura na forma com a calda. Pegue uma fôrma ou assadeira e coloque 2 cm de água no fundo. Coloque a fôrma de pudim nessa assadeira e cubra tudo, assadeira e fôrma com papel alumínio como se fosse uma tenda. Leve ao forno por 30 a 40 minutos. O pudim estará pronto assim que estiver firme. Retire a assadeira do forno e a fôrma da assadeira. Deixe esfriar e sirva. Se fizer com antecedência, cubra com filme plástico e deixe na geladeira até servir. Para remover o pudim da fôrma com maior facilidade, passe uma faca fina, bem levemente, nas bordas do pudim. Vire em um prato e sirva!

Guacamole:
1 abacate maduro
suco de 1/2 limão
1 pimenta dedo-de-dama picadinha
3 cebolinhas verdes picadas (com a parte branca)
1 colher de sopa de coentro picado
sal a gosto
Recheios:
500 g de contra-filé, limpo (sem gorduras nem nervos)
2 ou 3 lingüíças
Corte os abacates ao meio e com uma colher, raspe o interior da fruta e coloque em uma tigela. Esmague bem com um garfo, salpicando o suco de limão. Misture a pimenta, as cebolinhas verdes e o coentro e tempere com sal.
Recheio de carne: Corte a carne e a lingüíça em tirinhas. Leve as tirinhas para dourar em uma frigideira grande, até estar tudo bem cozido. Tempere com sal. Coloque o queijo cremoso tipo cheddar em um pequeno refratário e aqueça no microondas por alguns segundos, sem deixar ferver. Coloque os tomates picadinhos em uma tigela e a alface em tiras em outra.
