Abril, um mês marcado por datas muito significativas para os brasileiros: o dia da mentira, de Tiradentes, do Descobrimento, do Índio, resumindo, o mês do ufanismo nacional.

Eu não sou ufanista, mas quero dedicar esta coluna ao Índio brasileiro.

Não vou abordar aqui visões maniqueístas, com as quais nossos índios são retratados… como adultos infantilizados, inocentes na sua nudez, para desfazer essa imagem basta lembrarmos dos Tupinambás – afeitos a uma tenra carne humana, fosse ela de origem européia ou aborígine, sempre preparada à moda que todo brasileiro contemporâneo adora, um suculento churrasco. Nem como selvagens atrozes, haja vista os pacíficos Tupiniquins –, conhecidos como um exemplo no manejo sustentável da natureza.

Todos esses índios brasileiros deixaram para nossa cultura culinária o uso de produtos e a forma frugal de cozê-los até hoje presentes na moderna cozinha internacional.

Nossos índios exportaram para o mundo, se é que podemos assim dizer, o uso do milho, da mandioca, do amendoim, da batata-doce, do precioso palmito, de diversos tipos de feijão e pimenta, de frutas como o abacaxi, o caju, a goiaba, o mamão.

Não se trata de negar as delicias de outros povos, afinal a gastronomia brasileira na verdade é uma viagem saborosa de mais de cinco séculos de trocas alimentares entre índios, portugueses, africanos, europeus e por fim asiáticos, chegados ao Brasil mais recentemente.

A prática tão decantada da alta culinária internacional contemporânea, de preservar nos alimentos seu sabor original também é herança dos nossos índios.

Ufanismo patriótico? Nada disso. Também não é mentira de 1o. de Abril.

PEIXE COM BATATA DOCE

INGREDIENTES:

1 dourado de mais ou menos 2 Kg (limpo e aberto nas costas)

Sal (os índios o usavam a partir das cinzas)

PARA A PAÇOCA:

2 xícaras de castanhas de caju, 2 xícaras de farinha de mandioca torrada

3 xícaras de batata doce cortada em cubos pequenos, 2 pimentas murupi (pequenas, amarelas, micro picadas). Sal, 200g de manteiga (com licença culinária importada do oriente, trazida ao Brasil pelos portugueses).

PARA SELAR A PANELA DE BARRO COM TAMPA:

2 Kg de mandioca crua

água o suficiente

PREPARO:

Frite na manteiga as batatas-doces

Junte as castanhas de caju

Por último as pimentas e a farinha de mandioca torrada.

Recheie o peixe, coloque-o na panela de barro untada com manteiga.

Cubra com a tampa e calafete com uma pasta feita com a mandioca crua e água.

Leve ao forno brando por duas horas. E Bom apetite!
