Delícia Oriental

Quando fui avisada de que, neste mês, Felipe Ciutat não poderia escrever sua coluna por motivos de saúde, pensei, primeiro, em informar o ocorrido a nossos leitores, pedindo-lhes uma corrente de orações para nosso vizinho melhorar logo e voltar a escrever suas impressões e maravilhosas receitas, e, depois, em convidar outra pessoa para escrever a coluna nesta edição.

Lembrei, contudo, que costumo fazer uma receita deliciosa e, embora não seja lá essas coisas na cozinha, sempre recebo muitos elogios quando a faço. É uma dica perfeita para nossa vida de tempo escasso, pois é uma receita simples e de preparo rápido.

Apaixonei-me pelo prato nos fins dos anos 1980, quando fui apresentada por um querido amigo às delícias da gastronomia oriental. Quem me ensinou foi uma das donas do Hinodê, tradicional restaurante japonês do bairro da Liberdade.

O prato é o shimeji na manteiga, que aprendi a fazer direitinho. Modéstia à parte, nunca comi em outros restaurantes japoneses um mais gostoso do que o meu… Quer dizer, do que o da receita que a senhora japonesa me ensinou.

O shimeji é um fungo comestível, rico em lisina, que ajuda no crescimento ósseo, auxiliando na formação de colágeno e vitamina B1, que beneficia o sistema nervoso, os músculos e o coração. É um alimento de sabor delicado e muito versátil, acompanha carnes variadas, dá um delicioso molho para o macarrão ou pode ainda ser servido apenas com arroz.

E mais: possui baixo índice de calorias, fica pronto em apenas dez minutos, e a receita é tão fácil, que é quase impossível errar!

Shimeji do Hinodê

INGREDIENTES:

1 bandeja de shimeji (250g)

1 colher de sopa de manteiga

1 colher de sobremesa de açúcar

Meio copo de shoyo

3 colheres de sopa de Saquê

Suco de meio limão

PREPARO:

Corte o fundo grosso dos shimejis e separe-os em tufos. Coloque na panela a manteiga. Quando começar a derreter, jogue o açúcar e misture até caramelar. Coloque o shimeji e misture bem até ele murchar um pouco e dourar. Jogue o shoyo, mexa por dois minutos, e o saquê. Deixe cozinhar uns 5 minutos em fogo médio com a panela tampada. Coloque o suco de limão por último e bom apetite!
