No último feriado eu estava em casa, descansando e sapeando o controle remoto, me detive num programa da culinária. O culinarista ensinava como fazer uma torta de banana. Já pelas tantas, uma “querida amiga telespectadora” — nas palavras da apresentadora — telefonou, perguntando se poderia substituir a banana por outra fruta. 

Nesse instante, me solidarizei totalmente com a indisfarçável irritação da culinarista ao responder: “até poderia, mas não seria a mesma receita”. 

Tive a impressão de que, se não fosse uma boa dose de autocontrole ou, quem sabe, os preciosos pontinhos de audiência, aquela culinarista comeria a jugular da “querida amiga telespectadora” sem nenhum tempero, e mal-passada.

Isso me lembrou uma coisa que é irritante nos teóricos da culinária da moda: a frase infeliz … “um clássico revisitado”, aludindo às receitas consagradas com novos ingredientes e novas formas de preparo. Se é assim, não será mais um clássico, não é verdade? Portanto, se queremos saborear uma receita clássica, não há espaço para a criatividade.

Desculpem minha rabugice, acho que estou ficando velho, mas existem coisas que antes de ferirem nosso estômago, ferem nossa inteligência.

Então, sugiro um clássico para a receita deste mês. Por favor, não mudem nada!!!

Gnocchi de Semolina

INGREDIENTES:

500 ml de leite

100 g de manteiga

150 g de semolina

1 gema

100 g de queijo parmesão ralado

manteiga para untar

50 gramas de manteiga derretida

sal e noz -moscada ralada a gosto

PREPARO:

Numa panela ponha o leite e a manteiga. Tempere com sal, noz-moscada e leve ao fogo até ferver.

Junte a semolina, a gema, metade do queijo ralado, e misture até formar uma massa bem consistente.

Mexendo com uma colher de pau, cozinhe por 25 minutos ou até a massa desgrudar do fundo.

Unte uma superfície plana com a manteiga, espalhe a massa sobre ela e, depois, abra a massa com um rolo de macarrão em uma espessura de 2 cm.

Deixe esfriar, e com a ajuda de um cortador redondo, corte em discos, que devem ser colocados num refretário untado. Regue com a manteiga derretida, polvilhe o queijo restante e leve ao forno para gratinar.

É uma delícia, puro ou acompanhado de carne assada!
