Yes, Nós temos Bananas!

Quando Carmem Miranda conquistou a América com a música que contém esta célebre frase, muitos incorporaram a idéia do Brasil como a terra das bananeiras. Puro engano.

Embora ela esteja hoje disseminada pelas Américas, não é americana. A banana, que a humanidade cultiva há 8 mil anos e atualmente representa parte da alimentação diária de milhões de pessoas no mundo, tem, no entanto, suas raízes remotas fincadas na Ásia, mais especificamente na índia.

Não vamos nos ater aqui as receitas de chefs consagrados ou das iguarias feitas com a banana, vamos explorá-la de outra maneira especial: a polpa de banana verde cozida, como base capaz de multiplicar alimentos. Por se tratar da fruta verde, não possui gosto e, portanto, não altera o sabor dos pratos em que está sendo adicionada.

A criação é da Heloisa de Freitas Valle e a polpa de banana verde cozida, batizada de “biomassa de banana”. Na proposta de Heloisa, a biomassa de banana quase nunca é o ingrediente principal, mas o coadjuvante que enriquece a cozinha do cotidiano.

Neste artigo ensinaremos o preparo da biomassa, no próximo sua aplicação. Aguardem!

PROCESSAMENTO DA BANANA VERDE PASSO A PASSO:

1) Lave as bananas verdes com casca, uma a uma, utilizando esponja com água e sabão e enxágüe bem;

2) Numa panela de pressão com água fervente (para criar choque térmico), cozinhe as bananas verdes com casca cobertas com água, por 20 minutos;

3) Desligue o fogo após os primeiros 8 minutos, e deixe que a pressão continue cozinhando as bananas;

4) Espere o vapor escapar naturalmente (não force o processo abrindo a panela);

5) Ao termino do cozimento, mantenha as bananas na água quente da panela;

6) Vá aos poucos tirando a casca da polpa, que deve ser passada imediatamente no processador. É importante que esteja bem quente. O produto que sai do processador é a biomassa bruta da polpa;

7) Se não for utilizar imediatamente, guarde a polpa em saco plástico hermeticamente fechado, na geladeira por no mínimo 8 dias. Pode ser guardada por 3 a 4 meses no congelador, mas se necessita de um reprocessamento;

8) Corte as extremidades das cascas de banana e deixe em água com suco de limão entre 30 a 40 minutos;

9) Agora faça a biomassa de cascas que desejar com o processador elétrico.
