Ao contrário do que apregoam os conservadores mais cristalizados, nem toda mudança é intrinsecamente má e perversa. De vez em quando, é preciso renovar.

A regra vale para as pessoas e as coisas.

Os portugueses trouxeram para o Brasil as hortaliças, os legumes (agrião, espinafre, chicória, abóbora e pepino), os cereais (trigo e centeio), o leite, a manteiga, e as frutas (laranja, limão, figo, marmelo, melão e uva), a criação de animais (boi, carneiro, porco, cabrito, galinha, pato, cavalo), e temperos (salsinha, cebolinha, alho, coentro, manjericão, gengibre e mostarda), o sal e o gosto pelos doces.

Em compensação, os europeus receberam das Américas a batata, a batata doce, o tomate, o pimentão, o cacau, o milho, a mandioca, as pimentas, o feijão, o abacaxi, mamão, a baunilha.

A África exportou banana, o coco, o dendê, a erva-doce, o quiabo, a galinha-d’angola. Já a Ásia, contribuiu com o arroz, a manga, a cana-de-açúcar, a tangerina e o chá.

A gastronomia, uma coisa tão prosaica, nos ensina que é possível e, até mesmo desejável, lidarmos com as diferenças de uma forma pacifica e prazeirosa.

Que tal então, tirarmos partido duma receita consagrada, como a brasileiríssima moqueca capixaba, mudar os ingredientes e tempos de cozimento e ainda assim conservarmos o título do prato? Heresia? Pode ser, mas se o resultado visual e o sabor forem surpreendentes por que não? Vamos à receita!

MOQUECA GLOBALIZADA

INGREDIENTES:

1 kg de Kani desfiado, 50 ml de óleo de canola, 3 dentes de alho micro picados

5 tomates sem pele e sementes em cubos pequenos, 1 sopa lemon ervas (tempero pronto), 3 cebolas, 1 colher de sopa óleo de urucum (ferva as sementes de urucum com a colher de sopa de óleo. Quando o urucum passar da tinta para o óleo, coe e utilize (cuide para não queimá-lo), 1 copo de suco de limão siciliano, 1 litro de creme leite fresco

raspas limão siciliano, sal a gosto.

ACOMPANHAMENTO:

ARROZ BRANCO: 

Cozido com sal e misturado a coco ralado fresco proporção 3:1 (3 arroz 1 de coco)

PIRÃO:

3 mangas hadem liquidificadas, suco de 1 limão, 1 colher de sopa de açúcar

1 pitada de sal, 2 copos d’água, 1 xícara de farinha de mandioca crua

PREPARO:

Tampe o kani temperado com limão e ervas. Reserve.

Em uma panela de barro aqueça o óleo e doure levemente o alho.

Forre a panela com metade do tomate e da cebola.

Coloque o kani e distribua por cima o tomate e a cebola que sobraram.

Junte o óleo de urucum e o creme de leite.

Deixe ferver, acrescente o limão siciliano e ajuste o sal. Com a panela tampada ferva 10 minutos. Sirva a moqueca quente com os acompanhamentos.

PIRÃO:

Liquidifique as mangas com a água e pimenta dedo de moça, acrescente o sal, o açúcar e leve para ferver. Por último junte, a farinha mandioca.

O pirão deve ficar mole.
