O primeiro registro oficial da imigração árabe no Brasil data de 1835. Mas foi só em 1876, depois da visita de D. Pedro II – que falava árabe – a Beirute e Damasco, que os imigrantes árabes começaram a chegar ao Brasil. E, a partir dai, os imigrantes começaram a chegar ao país e hoje estima-se que a comunidade árabe no Brasil ultrapasse 12 milhões de pessoas – a maioria em São Paulo.
Quando li essa matéria, achei um pouco do meu passado, pois meus avós moravam numa vila, travessa da Rua Paula Souza, e todos os domingos nos reuniamos, cerca de 40 pessoas: lá estavam os tios, tias, primos e primas, em uma forma de confraternização que o povo árabe não deixou morrer. Meus tios saíam de casa por volta das 11 horas e quando regressavam eram recebidos com bandeijas de esfihas quentes, saídas dos fornos das senhoras da 25 de março, que viviam para isso. Hoje muitos anos depois, vejo que muito pouco mudou – graças a Deus. Mesmo perdendo meus pais há pouco tempo, hoje, eu e meus irmãos nos reunimos para assar o nosso cordeiro, e comer nossas delícias. Me sinto lisonjeada em poder compartilhar duas receitas com os leitores do Pedaço da Vila. Uma sopa fria de coalhada com pepinos, que além de ser muito refrescante era um dos pratos que comíamos em dias quentes, sentados na calçada. E a outra de um doce que os brasileiros chamam de “restilos” (como se lê em árabe).
Sopa fria de pepino
Ingredientes: 5 pepinos pequenos, 1/2 litro de coalhada fresca, 1/2 copo de água
2 dentes de alho, sal, pimenta-do-reino, 1/2 maço de hortelã fresca.
Preparo: Picar os pepinos em cubinhos e reservar. Misturar a coalhada com água, o alho amassado, sal, pimenta e hortelã picadinha. Colocar o pepino dentro deste molho e servir.
Doce de semolina
Ingredientes: 1/2 kg de semolina (sêmola de trigo), 1 e 1/2 xícara (chá) de açúcar
1 xícara (chá) de manteiga sem sal à temperatura ambiente, leite frio,
1 colher (chá) de fermento em pó, amêndoas cruas sem cascas,
óleo de gergelim ou manteiga para untar.
Calda: 4 xícaras (chá) de açúcar, gotas de limão ,1 colher (chá) de água de flor de laranjeira.
Preparo: Numa tigela, coloque a semolina, o açúcar, a manteiga e 2 xícaras (chá) de leite frio. Misture e deixe descansar de um dia para outro. A seguir, junte 3/4 de xícara (chá) de leite frio e o fermento e misture bem. Coloque numa assadeira untada com óleo de gergelim ou manteiga. Alise com as mãos molhadas. Leve ao forno médio, pré-aquecido, e, assim que começar a dourar, retire do forno. Corte em quadrados de 3 cm, coloque sobre cada quadrado 1 amêndoa e volte ao forno para terminar de dourar. Enquanto isso, prepare a calda. Leve ao fogo uma panela com 1/2 litro de água e junte o açúcar. Assim que começar a ferver, junte algumas gotas de limão. Quando atingir ponto de fio fino, retire do fogo e deixe esfriar. A seguir, junte a água de flor de laranjeira. Retire o doce do forno e cubra com a calda, reservando uma parte para o momento de servir.
